Crispy Beef INGREDIENTS 1tbsp roasted dry peanuts, coarsely crushed 1 tbsp cooking oil 500g minced beef 2 cloves garlic 2 tbsp RoniB’s Kitchen Black Bean Chilli Oil (2 tbsp if using the Extra Hot version) 3 tbsp ginger, minced 1-star anise 1 tsp runny honey 1tsp soy sauce 2 tbsp fish sauce half lemon, juice 1 tbsp sesame oil 2 spring onions, sliced thinly Cooking Procedure – Heat a pan and when hot, pour the cooking oil – Add the star anise on medium heat, add garlic and ginger – Add the beef, breaking it apart – When the beef has started to turn colour, addRoniB’s Kitchen Black – Bean chilli oil, honey, soy sauce, lemon juice, sesame oil and spring onions. Mix thoroughly. – Increase heat and crisp it up. – Garnish with a sprinkle with crushed peanuts and spring onions. – Serve hot. Share and Enjoy! – Optional: Serve on a bed of herby salad and couscous or rice

Crab Palabok ala RBK Ingredients Pancit palabok noodles or spaghetti (cook as per instructions in packet) 350g crab meat 250g prawns 2 tbsp cooking oil 5 tbsp RoniB’s Kitchen Garlic Chilli Oil (2 tbsp if using the Extra Hot version) 3 cloves fresh garlic, minced 2 banana shallots, minced 1/2 cup crab fat sauce (can be bought in Filipino stores; substitute with brown crab meat) 300ml creme fraiche 2 tbsp fish sauce 3 tbsp green onions or scallions, thinly sliced crosswise 1 or 2 hard boiled egg, sliced ½ cup of roasted peanuts, coarsely crushed ½ cup of pork scratchings or chicharon, coarsely crushed slices of lemon Cooking Procedure - Heat a cooking pan and when the pan is hot, pour the cooking oil - Saute the garlic and shallots until fragrant and translucent - Add the crab meat and prawns and cook for about 4 minutes - Add the RoniB’s Kitchen Garlic Chilli Oil, crab fat and creme fraiche. Mix and cook for 3 to 4 minutes - Season with fish sauce. Taste and add as preferred. - Add the cooked noodles to the pan and mix thoroughly. - Garnish with sliced hard-boiled egg, sprinkle with green onions, roasted peanuts and pork scratchings on top. Our Sweet and Spicy Crab dish will transport you by the seaside;) Ingredients 1-kilo crab, cut in half or crab claws 2 tbsp cooking oil 5 tbsp RoniB’s Kitchen Garlic Chilli Oil (2 tbsp if using the Extra Hot version) 3 tbsp ginger, minced 2 tbsp hoisin sauce 1/2 cup tomato ketchup 1/4 cup sweet chilli sauce 2 tbsp fish sauce 1/2 tsp sesame oil 1/4 cup water 3 tbsp green onions or scallions, thinly sliced crosswise Cooking Procedure - Heat a cooking pot and pour the cooking oil - Saute the garlic, ginger, and Garlic Chilli Sauce - Add the crab and cook for 3 to 4 minutes - Add the hoisin sauce, tomato ketchup, sweet chilli sauce, fish sauce, and sesame oil then mix with the other ingredients - Pour-in the water, cover and bring to a boil then simmer for 10 minutes or until the sauce is thick - Garnish with a sprinkle with green onions Lemon slices on the side. Chicken Inasal Ingredients 1 kilo chicken (thighs or quarters) 2 pcs lemon grass, crushed and sliced 2 garlic cloves, crushed 3 tbsp ginger, minced 1/2 cup cane vinegar 4 tsp achuete powder (2 tsp for the marinade and 2 for the basting sauce) 2 tsp salt 1/4 tsp pepper 1 tbsp sugar 100g salted butter Oil for brushing the grill Dipping Sauce soy sauce cane or palm vinegar RoniB’s Kitchen Garlic chilli oil pinch of salt pinch of ground pepper pinch of sugar Combine the above ingredients. Adjust quantity of soy, vinegar and garlic chilli oil based on your taste. Cooking Procedure Combine all ingredients in a bowl except for the butter. Make sure chicken is covered. Marinade overnight for best results. When ready to cook, heat your grill or barbecue. Coal-fired barbecue is better to achieve the smoky flavour but a grill pan works as well. While your grill is heating up, combine butter and the remaining 2 tsp of achuete powder. Oil your grill to prevent the chicken from sticking Take chicken out of the marinade. Grill or barbecue the chicken, while basting with the butter-achuete. Turn your chicken pieces constantly and move around the grill to ensure even cooking.
